Liputan6.com, Jakarta -Hewan ternak yang terinfeksi antraks tidak boleh dipotong untuk diambil daging dan dikonsumsi. Meski telah dimasak, daging hewan ternak terinfeksi antraks berisiko menularkan penyakit ke manusia.

“Daging dari hewan yang sakit dan mati mendadak tidak boleh dianggap aman untuk dikonsumsi, sekalipun telah dimasak,” kata Dosen Sekolah Kedokteran Hewan dan Biomedis (SKHB) IPB University, Dr drh Denny Widaya Lukman.

Denny mengatakan antraks disebabkan oleh bakteri Bacillus anthracis yang mampu membentuk spora sebagai mekanisme perlindungan diri ketika kondisi lingkungan tidak sesuai.

“Dalam tubuh hewan atau manusia, bakteri berada dalam bentuk sel vegetatif yang infektif karena kondisi anaerob. Sementara itu, di luar tubuh hewan atau manusia, bakteri berada dalam bentuk spora,” tuturnya mengutip laman IPB, Selasa (20/10/2026).

Spora antraks dapat bertahan hidup di lingkungan dan tanah hingga puluhan tahun. Maka wilayah yang pernah mengalami kasus antraks perlu mendapat perhatian khusus untuk mencegah penularan berulang.

Salah satu jalur penularan dari sapi atau hewan ruminansia lain yang terinfeksi adalah konsumsi daging atau susu yang tercemar bakteri tersebut. Daging dan jeroan hewan penderita antraks dapat mengandung sel vegetatif bakteri yang berpotensi menyebabkan penyakit pada manusia.

Denny menjelaskan, antraks gastrointestinal atau antraks pada saluran pencernaan dapat terjadi setelah seseorang mengonsumsi bahan pangan yang terkontaminasi. Bakteri dan toksinnya merusak jaringan, lalu menyebar melalui aliran darah (bakteremia).

Dalam kondisi berat, infeksi dapat berkembang menjadi sepsis dan mengganggu berbagai organ, bahkan berujung pada kematian.

Gejala yang muncul dapat berbeda-beda, bergantung pada jumlah spora yang masuk, kondisi imunitas, usia, serta kemungkinan terjadinya bakteremia dan sepsis. Gejala umumnya muncul dalam satu hingga tujuh hari setelah seseorang mengonsumsi daging yang mengandung spora antraks.

Jangan Konsumsi Daging dari Hewan Ternak yang Mati Mendadak

Memasak daging yang mengandung spora antraks tidak dapat menjamin spora tersebut menjadi tidak aktif.

Maka dari itu Denny berujar, masyarakat di wilayah yang pernah mengalami kasus antraks perlu memahami bahaya penyakit ini bagi kesehatan hewan maupun manusia.

“Masyarakat diimbau tidak mengonsumsi daging dari ternak yang sakit atau mati mendadak. Jika menemukan kejadian tersebut, warga sebaiknya segera melapor kepada petugas kesehatan hewan setempat agar ditangani sesuai prosedur dan tidak menimbulkan risiko lebih luas,” tutup Denny.
